First Blog Post & Dairy-Free Pesto Recipe!

Hello and welcome to my blog! :) I've been working very hard on creating this platform so I can share my recipes and health tips with you all and I couldn't be more happy to finally have it up and running. As some of you may know, I run a food page on Instagram called @mycolourfulappetite where I share my meals with attached recipes and nutritional tips. I've become a part of such a beautiful community of foodies and health & wellness professionals and couldn't be more grateful. I'm sharing this because the recipes I post here will be directly linked to the images I share on my page!


To kick things off, I'm sharing a current favourite of mine: Dairy-Free Pesto! This one is so exciting for me because I recently just got my first food processor and have been having so much fun using it (plus anyone who knows me, knows I'm obsessed with pasta so creating my own healthy sauces makes it that much better)!



Dairy-Free Pesto


Recipe:

2 cups lightly packed basil

1/4 cup extra virgin olive oil

1/4 cup raw cashews

3 cloves garlic

1 tbsp nutritional yeast

1 tsp lemon juice

Black pepper to taste

Chilli flakes to taste (optional)


Directions:

  1. Combine all ingredients in a food processor or high speed blender, but food processor is preferred

  2. Pulse/blend until all ingredients are combined (about 2-3 mins), scraping down sides as necessary

  3. Pour over your favourite pasta, mix to combine, and serve!

  4. BONUS**: serve with blistered cherry tomatoes; toss some tomatoes in extra virgin olive oil and black pepper and broil in oven until tomatoes are softened and skin is slightly charred
