Jazzed-Up Buckwheat Porridge
Hello and happy Wednesday!
Today I'm sharing a recipe for a "jazzed-up" buckwheat porridge. This idea came to mind because I've been actively trying to include a wider variety of foods in my diet, more variety = more nutrients (in most cases!). It's a staple to have oats cooked up for breakfast, but trying buckwheat in their place is a great way to change it up. I've included lots of toppings to add not only colour and flavour but many nutrients!

Recipe:
1/2 cup buckwheat groats
1 cup water
1/4 cup nondairy milk
1/3 cup raspberries
1/2 tsp vanilla extract
1 tsp maple syrup
Toppings:
1 tbsp goji berries
1 tbsp chopped walnuts
1 tbsp pistachios
1 tbsp sunflower seeds
1 tbsp cacao nibs
Directions:
1) Combine buckwheat and water in a small pot and bring to a boil
2) Cover, reduce heat and cook for 10 minutes on low heat
3) Once buckwheat is cooked, stir in vanilla, raspberries, maple syrup and nondairy milk
4) Transfer to a bowl and sprinkle on toppings
5) Serve hot and enjoy!
