Plant Based Poke Bowls
Today (for meatless Monday!) I'm sharing a beautiful, refreshing plant based meal. This is a great summer choice because it's full of fresh fruit and veggies, and is accommodating to all eaters with its high nutrient and protein content. I had a lot of fun making this, and even more eating it, so I'm thrilled to share it with you!
Plant Based Poke Bowls
Recipe: (Serves 1)

1 cup cooked brown rice
1 cup raw chopped greens (spinach, kale, swiss chard, etc.)
1/4 cup raw chopped red cabbage
1 raw carrot sliced into rounds
1/3 cup cooked edamame
1/4 cup raw sliced red pepper
1/3 cup cubed mango
2 stalks chopped green onion
1/2-1 cup cubed tempeh (marinated in low-sodium tamari)
1 tbsp vegan mayo + 1-3 tsp sriracha/sambal oelek (spicy mayo!)
1 tsp sesame seeds
1 tbsp low sodium tamari
Fresh chopped cilantro
Sliced jalapeno (optional)
Dried seaweed (optional)
Directions:
Marinate tempeh in a few tablespoons of low sodium tamari for a minimum of 15 minutes
Cook tempeh in a cast-iron skillet over medium heat for about 3 mins per side or until desired doneness
While tempeh marinates and cooks, prepare all vegetables and fruits
Load up your bowl starting with the brown rice, then spread 1/2 the spicy mayo over top of it, then add in veggies and fruits in bunches on top
Mix remaining spicy mayo with 1 tsp of water or you could use tamari, this should make it pourable (if not you can add a little more) and pour over bowl
Top with the sesame seeds and tamari
