When I made this recipe, I really had no idea how good it was going to turn out. I have little experience with chia pudding, and had never tried this flavor combination before. However, anything with raspberries is usually a yes from me, and this recipe did not disappoint! Raspberries and vanilla are magical together!
I'm a fan of chia for many reasons, but two in particular. It's one of the very few sources of complete plant based protein and is an outstanding source of anti-inflammatory omega 3 fats. Two excellent reasons to include these seeds in your diet!
Like most of my creations, this pudding is vegan friendly and gluten friendly.
3 tbsp chia seeds
1/2 cup nondairy milk
1 tsp maple syrup
1/2 tsp pure vanilla extract
1/4 cup raspberries, mashed
Scoop of coconut yogurt
Mash raspberries in a small bowl
Add in chia seeds. nondairy milk, maple syrup and vanilla and mix thoroughly
Refrigerate for at least 30 minutes to set (or overnight)
Add toppings and serve!
