Energy bites have gained quite a bit of popularity lately. They're a great snack food, full of nutrients and easy to make. With the influx of recipes for them, I thought I'd create one that goes the extra mile. I have included 3 beautiful super-foods to make these goodies even healthier! Superfoods are exactly what the name implies, they are incredibly nutritious, health-promoting and powerful at fighting diseases. See the (**) to indicate the superfoods here.
3/4 cup nut or seed butter of choice
1 cup rolled oats
1/4 cup hemp hearts**
1/3 cup shredded unsweetened coconut
1/4 cup dried goji berries**
1/3 cup cacao nibs**
3 tbsp maple syrup
1) Combine all ingredients in a medium-sized bowl
2) Roll mixture into bite-sized balls (it should make about 15)
3) Store in the fridge and enjoy 2 or 3 for a healthy snack!
